Artichokes appear often on Italian menus, because their wonderful, mildly nutty, earthy sweet flavor is perfected by the Italian climate. In short, Italian artichokes are amazing. That’s why we use them to make our Artichoke Bruschetta, where their flavor is set off by olive oil, flecks of red and yellow peppers, capers and spices. Enjoy on rough toast or try it with grilled chicken.
