Folklore has it that a bishop happened upon a newly married couple in the small town of Saronno, Italy where he was presented with a gift of these original delights. A special blessing for a long and happy marriage was given in return as a token of appreciation. The recipe supposedly stayed secret for centuries. Alessi Amaretti are made in the same tradition with egg white, sugar, and crushed apricot kernels. The result is a crisp and almost air-light texture cookie with hints of apricot flavor. Delicious with espresso or tea but also delightful when crumbled over gelato.
