Legendary Pitmaster Ed Mitchell is from Eastern NC, but he still appreciates the Red Sauce served in the Western part of the state, like in Lexington, NC. On that side of the state, barbecue is made from pork shoulder and the sauces use tomatoes, hence, Carolina Red.
